Fresh Vegetables…Simple and Flavorful

Freshly picked vegetables have so much flavor that often the simplest preparations are best.

Pick summer squash when it's small, and prepare it right away. These are Zephyr (yellow and green) and Costata Romanesco  (green). Both of these are so flavorful that it's almost criminal to overwhelm them with other strong ingredients. On this evening I used fresh cilantro, a small amount of butter, and salt and pepper.

Cooking the squash in butter until it was slightly caramelized, then tossing in the cilantro with salt and pepper was just enough.
